At the top of Koko Head
Aloha! Since our living/house plans changed about a month ago and we started looking for a house instead, we finally landed the most perfect one last day. It’s up on Tantalus, very secluded and with the most epic view over down town/Waikiki. The owner told us it grows mangoes, avocados, papaya and bananas all around the house. It’s literally a dream come true. Can’t wait to get there and actually see it in person, Jay (roommate to be) has promised we’ll drop our jaws and by the pictures to judge I’m sure he’s right.
My all time go to-smoothie combination is the classic banana, blueberry and peanut butter one. I also like to give it a extra boost with green spirulina as well. But since I’m finally back in the US (yey!) the nut butter options are craaazy. And so my new favorite is to mix the above with Wild Friends chocolate coconut peanut butter. I mean that name just says it all right? This smoothie is also great after workouts since its so filling, just a friendly monday tip for ya’ll. It really doesn’t have to be more complicated than that!
Since I last talked to you the days have been going by. Some faster then others but the Day is finally starting to come up. On the 4th of august I’m leaving for Portland to spend some weeks with Alec and his family and have a little summer break. I just wanna enjoy all of Portlands food, go on a lot of hikes, celebrate my 21st birthday and have the laziest days at Alecs parents house before we later in August leave for the tropical paradise above. Its been a long “to-do list” getting to this point but everything is finally starting to get checked off, with some smaller things I’ll get to once on the Island.
But for right now I have 9 more days at work and to make ’em as great as possible I’m gonna start this week out with a run to get that extra energy.
Talk to you soon
Okay so I already told you I’m a breakfast addict but with that also comes that I’m a breakfast expert. And not the last, I’m also an oat meal goddess. And for a rainy cold Portland morning this banana oatmeal is perfect.
2 per. →
✧ 1 cup of whole rolled oats
✧ 1 1/2 cup of water
✧ 1/2 ripe banana
✧ coconut sugar (optional)
Mix the oats and water and put to slowly boil. Stir constantly. Add the banana and mush it in the oats, this will give it a extra taste boost. And if you like it a little sweeter, add some coconut sugar right before you take it of the stove.
So the oatmeal is already tasting great, but we all know it’s all about the toppings. Peanut butter is a must for me, on almost everything. This one is coconut and chocolate flavored(!!!!!), mix it with apple, for crunch and a little sourness, and some banana coins for extra banana-flavor. And to top it of coconut and almond granola. So simple and so delicious!
Like always coming back home is a struggle. Not only because of the big time difference (jet lag is a constant state now a days it seems) and getting all of my routines back and my work mode on. But saying goodbye to my favorite person once again is the worst. Although I know it won’t be that long until I see him again. I just get so spoiled after having him around 24 hours of the day that going back to FaceTime calls is rough. (But at the same time I’m super thankful that its so easy to stay in touch now a days!)
But this time around might be the hardest one ever for more then the reasons above. Since first of all, I gave up my apartment before leaving on this trip. So I don’t really have a stable place to rest my head and call my own at the time. Second of all, I have all of my belongings packed down in boxes and spread out over town. And last of all, not only is jet lag stealing my energy at the time I recently realized my medicine is affecting me more and more both physically and mentally.
So to help me stay positive, get my energy back and my head straight I decided to make a list of all the good things that is and are to come!
❀ There’s no snow left here and spring and summer is just around the corner, which in Sweden is a truly magical time.
❀ I joined the SELFs “six weeks till summer” challenge that Natasha Oakley and Devin Brugman is hosting. It consists of daily easy workouts and tips you can do. And you get them directly send to your email. Its the perfect little kick I need to get my but back at the gym. If you want to join as well here’s a link.
❀ I have two days to just relax until reality really kicks in and I get back to work. But once Friday comes I’ll finally get to see my wonderful co-workers again as well.
❀ I have three months left here in Umeå until I leave for Hawaii, and one of them Alec is (finally) coming!
❀ Although I don’t have my own fridge or kitchen at the moment, I can still finally make all of my own favorite meals. Cause lets admit it, eating out is great but nothing beats your own creations right? or is it just me?
❀ Keeping up with the Kardashians next season is starting up soon. And if you say you don’t enjoy that show you’re either lying or haven’t seen it, lol!
❀ I don’t have to drag around or live out of that big backpack anymore.
So even if I didn’t wake up by my alarm today. I still got to eat my favorite breakfast in my pajamas while watching the new episodes of New Girl with Hobbe (my puppy, best friend, little brother etc). Which is like the best kind of mornings ever. So now I’m gonna clean up a little before I take a quick nap. Aaaand before you think of lecturing me, its only to prevent me from falling asleep at 7pm and then staying up all night instead. I just need a little energy to fight through the afternoon and night. And tomorrow morning I’ll get another try to hear that alarm.
Welcome to a fresh, and very different from before, start to this blog. Since it´s a new start I figured a proper introduction was in order.
I am Emma Hurtig, a Swedish 20 year old girl currently located in my home town Umeå. I just got back from a monthly long trip in Asia (Vietnam, Indonesia and 24 fast hours in Singapore) plus 2,5 weeks visiting my boyfriend in Portland, Oregon. And that’s usually where my money always ends up going, to trips and flight tickets. But when I’m not out in the world I live a simple life in my hometown. Working as much as I can manage, taking long walks with my dog and a podcast in my ears, watching new girl and preferably eating breakfast (serious acai bowls and nice cream obsession right here!) for every meal of the day. I worship nature and all of its beauty, variety and creatures. I believe that every day is filled with beauty if you keep your mind open to it, and thats something I’m currently working on myself. Controlling my mind to stay positive, open and focused on what matters to me. “What you think you create, what you feel you attract and what you imagine you become” and since I got aware of my thoughts I must say I’ve been doing better then ever. And in just a few months I’m moving to one of the places I’ve grown up dreaming about with the love of my life, Hawaii!
Here I will share my travels, my best vegan recipes and tips, my everyday photographs and whatever else I feel the need to express. My own little canvas to a happy, healthy, loving life. Hope you’ll enjoy it all with me! ♡
